ARDENT GOURMET: Grizzly Tuna

Few food trucks can throw a haymaker as well as a brick and mortar restaurant. Many are mere culinary milquetoasts (unlike those we choose to write about). Grizzly Tuna - maybe not quite a truck, but truck’esque - throws a haymaker. In order to concentrate its forces, their menu consists of just two items, locally-fished tuna tacos and tuna fish-and-chips to knock you silly.
Your wife is a fish-and-chips girl and she approved entirely of the crisp coating and the meaty, flavorful interior of their deep-fried albacore tuna. Though probably flash-frozen, it tasted completely fresh. Critical of many chips, she liked these.
You’re a tacos boy and were smitten by Grizzly Tuna’s version. The albacore was crisply coated and perfectly complemented by shredded cabbage, tomato, and cojita cheese. Flavorful, fresh, meaty, moist, crunchy, saucy, you’ve never had better tacos of any sort in your life. It’s just possible that tuna is more flavorful than your other fave denizen of the deep, halibut.
A dog, maybe a pack of dogs, to nibble up all the taco detritus when you’re done eating is a good idea.
This is pinnacle food. It’s incomprehensible not to eat here.
